Tallow- Grass fed because ALL cows are grass fed. It's just sometimes that they're grain finished. This is from a very small butcher shop that specializes in processing one or two animals for farmers at a time, not feed lot or cull cows. That's a huge reason why I trust this so much. Your small farmers are in my opinion, much more tuned into their animals and are loved pets that they raise to feed their families and sell off a little extra to friends. It's the best quality. This tallow is rendered "dry" meaning there is no additional water used. The USDA butcher shop puts it all in a large copper kettle and heats it, then lets any moisture steam off and then it is strained and packaged. This leads to a high quality item with a longer shelf life than most.
Why tallow? It's rich in healthy fats. Beef tallow is primarily composed of saturated fats, which are stable and beneficial for maintaining energy levels and supporting cell function. It supports heart health which I know is contrary to some misconceptions and what you've been taught, the saturated fats in tallow can support heart health by helping to balance cholesterol levels when consumed in moderation. It also has a high smoke point (around 400°F), beef tallow is ideal for high-heat cooking methods like frying, roasting, or sautéing, without producing harmful compounds. It's rich in conjugated linoleic acid which has been linked to improved fat metabolism, enhanced immune function, and reduced inflammation. Tallow also provides omega-3 and omega-6 fatty acids, which are crucial for brain function, reducing inflammation, and maintaining healthy skin. Then there is vitamins, beef tallow contains Vitamin K2, a fat-soluble vitamin that plays a key role in bone health, cardiovascular health, and proper calcium utilization in the body and those healthy fats and vitamins can help improve skin health by promoting moisturized, smooth skin and help treat skin conditions like eczema and psoriasis when used topically. Another vitamin is antioxidants like vitamin E, which help fight oxidative stress and support overall cellular health. It can support satiety (feeling full) and weight management. Because beef tallow is high in fat, it can help increase feelings of fullness, which may reduce overall calorie consumption and aid in weight management. Hmm, fries used to be cooked in tallow but new oils were manufactured that still leave you hungry and therefore, wanting to buy more of their product. Crazy eh? One great reason I also use it is it's natural and unprocessed. When rendered at home or sourced from high-quality, grass-fed cows, is a minimally processed fat, free from artificial additives or preservatives, making it a healthier cooking option.
Lard- Lard is done in a similar fashion and is sourced partially from pigs we raise here and then we buy additional fat from the butcher. Same thing, They don't butcher for huge operations, just small families like ours raising a few which leads to really healthy happy animals.
Why use lard? Lard is high in monounsaturated fats, which are heart-healthy fats known to help reduce bad cholesterol levels and lower the risk of cardiovascular disease. It also contains vitamin D. Lard from pastured pigs is a good source of vitamin D, which is important for bone health, immune function, and overall well-being. It's stable for high cooking temperatures. Lard has a high smoke point, making it ideal for frying and sautéing without breaking down into harmful compounds, unlike some vegetable oils. No trans fats. Unlike many processed vegetable oils, lard is naturally free from trans fats, which are known to increase the risk of heart disease.
